Peel and devein the shrimp, making a slit along the back. Set aside.

Rub the shrimp with salt until the surface feels slightly sticky, then rinse briefly with water to remove excess salt (this helps keep the shrimp crisp). Marinate with rice wine for 10–15 minutes.

Coat both sides of the marinated shrimp evenly with sweet potato starch.

Heat oil in a pan. Once hot, add the shrimp and deep-fry. (Do not stir immediately after adding the shrimp, as this can cause the coating to fall off.)

When the shrimp turn pink and the slit on the back turns white, remove from the oil and drain on paper towels.

Arrange pineapple slices on a plate, place the shrimp on top, sprinkle with black pepper for extra flavor, and drizzle with salad dressing. Enjoy!
