Combine the pork with all of the marinde ingredients for at least 4 hours. Preferably 24 hours

dice the peaches into small cubes

add the onion, cilantro, juice of one lime and salt to the peaches and set aside

slice the cabbage into thim strips and set aside

using the back of a fork break up the queso fresco until it crumbles and set aside

pre-heat a pan with a quarter inch of vegitable oil

fry the tortillas for about 10 seconds on either side until crispy and set aside

in another pan add 2 tablespoons of vegitable oil into a pan and allow it to get very hot

add the pork in 3 batches to the pan and fry them until crispy
- 10
asseble tacos adding some of the pork, queso fresco, peach salsa, cabbage and a wedge of lime
