Ingredients

  1. meat
  2. 3 lbporked chopped into 1/2 inch cubes. it is sometimes easier cook as 1 inch cubes and then choped into finer pieces after cooked
  3. pork marinade
  4. 2chipotle in adobo sauce
  5. 1 tbspancho chili powder
  6. 1 tbspchili powder
  7. 3 clovegarlic
  8. 1 tbspsalt
  9. 1/2 tbspmexican oregano
  10. 1/2juice of a lime
  11. salsa
  12. 1 lbfrozen or fresh peaches
  13. 1/4 cuponion
  14. 1/4 cupchopped cilantro
  15. 2diced jalapeno
  16. 1juice of one lime
  17. 1/2 tspsalt
  18. tacos
  19. 1fresh corn tortillas
  20. 1/2 cupqueso fresco
  21. 1/2 headred cabbage
  22. 1lime cut into wedges

  1. 1

    Combine the pork with all of the marinde ingredients for at least 4 hours. Preferably 24 hours

  2. 2

    dice the peaches into small cubes

  3. 3

    add the onion, cilantro, juice of one lime and salt to the peaches and set aside

  4. 4

    slice the cabbage into thim strips and set aside

  5. 5

    using the back of a fork break up the queso fresco until it crumbles and set aside

  6. 6

    pre-heat a pan with a quarter inch of vegitable oil

  7. 7

    fry the tortillas for about 10 seconds on either side until crispy and set aside

  8. 8

    in another pan add 2 tablespoons of vegitable oil into a pan and allow it to get very hot

  9. 9

    add the pork in 3 batches to the pan and fry them until crispy

  10. 10

    asseble tacos adding some of the pork, queso fresco, peach salsa, cabbage and a wedge of lime
