Preheat your oven to 180°c

Prepare your baking tin and measure out your ingredients

Seive flour and cocoa and put aside

Separate the egg yolk from egg white
- 5
In a bowl beat eggs whites until soft peaks form.

Very careful sprinkle the sugar on top of the white, being very careful not to collapse them. Add the egg yolks and vanilla and beat until soft firm peaks form.

Fold in the mixture of flour and cocoa gentely so that the air doesn't escape.

Put the batter in the baking tin and bake for 40-50minutes or until a skewer inserted comes out clean

Once the cake has completely cooled, use sugar syrup to moisten the cake.
