When I was a little girl, my favorite vegetable was broccoli ONLY BECAUSE they looked like miniature trees.... I remember pretending I was a giant whilst gnawing on the "tree leaves". Every year, for my birthday, my father would ask me what I wanted him to cook and every year... it would be broccoli soup. I think its pretty obvious why I love this soup. I have veganized it, although it still tastes exactly how I remember it. Enjoy.

Ingredients

  • 3Yellow Potatoes
  • 1(small) Cauliflower
  • 1 HeadBroccoli (stems peeled and florets chopped small)
  • 1/2white Onion (minced)
  • 2 cupsVeggie Broth
  • 1 tbsSalt & Pepper (more to taste)
  • 1 tspCayenne & Garlic Powder (more to taste)

Steps

    Boil some water in a medium sized pot. Cut the potatoes, cauliflower, and broccoli stems into reasonable pieces to eventually blend, which will be your "cream" base.

    While veggies are boiling quickly steam broccoli pieces with the minced onion. You can put some olive oil and sauté

  3. 3

    When the potatoes, cauliflower and broccoli stems are soft, strain them and blend with a cup of veggie broth in an emulsifier/blender until smooth.

    Add back to the pot with the other cup of veggie broth and the broccoli/onion mixture. Let simmer on medium heat for 10 minutes. Then lower heat to low, add all spices to taste, and let simmer for another ten minutes.

    Enjoy with crusty bread and a salad! (or whatever)
