Instant beet root achar is very easy to prepare and can hv with rice ,roti or anything.
Steps

Peel, wash and chop beetroot. cut as per your preference..

Take a kadai. heat oil put on low flame..once hot put kashimiri and red chilli and saute few sec. note not to burn the masala(if i feel oil is too hot off the flame and add the masalas)

Lightly roast the zeera, raai and methidana and grind.. add this powder to the oil and saute well.

Put vinegar,sugar, salt and curry leaves.saute

Add the beetroot and saute well...adjust salt,sugar, vinegar and spice according to your taste.

Instant achar is ready..
