In our family recipe, we add chili and pickled chili vinegar directly while stir-frying, so you don't need to season it again at the table. You can also add other vegetables if you like.

Heat a little oil in a wok or large skillet. When hot, add the wide rice noodles and stir-fry until fragrant. Add a splash of dark soy sauce to give the noodles color.

Crack the eggs into the pan and stir-fry until combined.

Add the Chinese broccoli and stir-fry. Season with salt, sugar, soy sauce, chili flakes, mushroom sauce, and pickled chili in vinegar. Taste and adjust seasoning as desired.

Stir everything together until well mixed. Serve immediately.
