Ingredients

10-15 minutes
Serves 4 servings
  • 1.1 lbswide rice noodles (about 500 grams)
  • 4-6small Chinese broccoli stalks (gai lan)
  • 4large eggs
  • 1 teaspoonsalt
  • 2 tablespoonssugar
  • 2 tablespoonssoy sauce
  • 1 tablespoonmushroom sauce
  • 2 teaspoonschili flakes
  • 2 tablespoonspickled chili in vinegar
  • 1 pinchblack pepper

Steps

10-15 minutes
  1. 1

    Heat a little oil in a wok or large skillet. When hot, add the wide rice noodles and stir-fry until fragrant. Add a splash of dark soy sauce to give the noodles color.

  2. 2

    Crack the eggs into the pan and stir-fry until combined.

  3. 3

    Add the Chinese broccoli and stir-fry. Season with salt, sugar, soy sauce, chili flakes, mushroom sauce, and pickled chili in vinegar. Taste and adjust seasoning as desired.

    Stir everything together until well mixed. Serve immediately.
