Banana and Oat cake

Preheat oven at 350°F. Prepare baking pan and line with wax paper.

Mix flour and oats with baking powder salt.

Beat the eggs into a container and beat with oil, sugar, honey, essence and milk to get smooth consistency.

Add the mix into the flour to get a viscous mix. Add in mashed bananas and mix in. Turn the batter over evenly mixing in as few times as possible to limit gluten formation. You can add a teaspoon of vinegar too.

Add to the pan and bake for 30-40 min.

Serve with juice, tea or ice cream for dessert.
