My grandpa used to make this delicious vegetarian roast for special family holiday meals. My mother has carried on the tradition, and now I've started to make it. Oh, I should mention, we don't have any idea who Laura is/was. But thank you, Laura.

I almost always double the recipe and add a little oven time. It's always very popular, and if it doesn't disappear, it's great as leftovers.

  1. 2 cupsground frozen Worthington Chicken or Smoked Turkey (280g)
  2. 1 cupchopped onion
  3. 1 cupchopped celery
  4. 1 cupevaporated milk
  5. 1 cupwater
  6. 1/2 cupsaltine cracker crumbs
  7. 1/2 cupbreadcrumbs
  8. 3eggs
  9. 4 Tbspvegetable oil
  10. 2 tspMcKay's Chicken Style Instant Broth & Seasoning
  11. 1 tspseasoned salt
  12. 1/2 tspMcCormick Poultry Seasoning
  13. 1/2 tspbasil
  14. 1/2 tspAccent (MSG)

Steps

1.5 - 2 hours
  1. 1

    Sauté the onion, celery, chicken seasoning, poultry seasoning, and basil.

    Whisk the eggs; mix in water, milk, seasoned salt, Accent, cracker crumbs, and breadcrumbs.

  3. 3

    Combine everything in a bowl and mix well.

  4. 4

    Pour into a casserole dish. Bake in a water bed at 350F for 30 minutes, then outside the water bed for an additional 15-30 minutes until golden-brown.
