Preheat oven to 180 c.

Peel sweet potatoes and slice into 3 cm rounds.

Place into a baking tray and toss with oil, salt, pepper and the Cajun spice.

Roast for one hour or until soft and caramelised.

Once cooked, squeeze the garlic into the yogurt and mash together.
- 6
Serve Sweet Potatoes with yogurt, and sprinkle spring onions onto the yogurt.
