Salmon poached in coconut milk
A light and delicious supper to serve with boiled white rice.
Steps

Slice all the vegetables and fry in cooking oil with garlic, ginger and chilli for a couple of minutes.

Add the coconut milk, soy sauce, fish sauce and stir gently.

Add the salmon fillets and poach until cooked (about 5 minutes).

Add lime juice, chopped coriander and spring onions.

Season to taste.

Serve immediately with plain boiled rice.
