Ingredients

2 servings
  1. 1red pepper chopped into strips
  2. 1 packetshitaki mushrooms sliced
  3. 1 packetmange tout
  4. 1 packetbaby sweet corn cut into pieces
  5. 3-4spring onions diced
  6. 2 clovesgarlic
  7. 1thumb sized piece of ginger grated or sliced
  8. 2salmon fillets
  9. 1 tbssoy sauce
  10. 1 tbsfish sauce
  11. juice of half a lime
  12. coriander to garnish
  13. 1 tincoconut milk
  14. 1 tbscooking oil
  15. to tastesalt and pepper
  16. 1chilli finely diced

Steps

30 minutes
  1. 1

    Slice all the vegetables and fry in cooking oil with garlic, ginger and chilli for a couple of minutes.

  2. 2

    Add the coconut milk, soy sauce, fish sauce and stir gently.

  3. 3

    Add the salmon fillets and poach until cooked (about 5 minutes).

  4. 4

    Add lime juice, chopped coriander and spring onions.

  5. 5

    Season to taste.

  6. 6

    Serve immediately with plain boiled rice.
