Chicken Kebabs
Light meal that I love in the Summer!
Steps
- 1
Turn the oven to 180C fan. Wet the kebab sticks if wooden and slide the diced chicken on to the sticks. Then arrange the vegetables onto separate sticks.
- 2
Lay the kebabs on a tin or baking tray but make sure they aren't touching the bottom of the pan.
- 3
In a saucepan heat up a good chunk of butter, just a bit more than can cover the bottom of the saucepan. Do not boil! Add the brown sugar and heat gently until it dissolves then add the lemon juice.
- 4
Either using a brush or a spoon pour the sauce over the kebabs and put the chicken ones in the over for 5-10mins
- 5
Put the vegetables in and carry on cooking for about 10 more minutes. Cook the rice
- 6
Serve by pushing the chicken and veg off of the sticks into a plate/bowl with rice and then pour the juice from the bottom of the pans on top
