Ginger is my all time favourite spice ,it's flavor,the aroma not to mention the endless health benefits of this magical herb!
This cake came about randomly ,when one day I was down with a cold ,but was craving me a snack !! I was tired of the hot water infused with ginger,to help sooth my cold,and came up with this super amazing cake that kills two birds with one stone. 😋😜
Should I say three 😂,I got my craving satisfied,my cold calmed plus my mood lifted doing what matters most in my life BAKING🎊

First,peel the ginger,then grate it and boil it in the milk to get the flavors infused,

While the milk and ginger is boiling, sift the flour and baking powder,and add the salt

In a separate bowl,melt the butter / margarine,when it's back at room temperature after melting,add the sugar and the beaten eggs(note : to avoid bad eggs compromising your mixture beat them in a different bowl then add them to the butter and sugar mixure)

Once the milk and ginger have come to a boil,wait until it's cooled,meanwhile pre heat oven in this case,prepare a pressure cooker linned with sand / salt just enough to cover the bottom,place on gas cooker and cover(do not place the steam stopper, if using a normal sufuria I.e aluminum pot use a lid exact size with the pot,) over high heat for 20mins

Once the milk is cooled,add it to the egg mixture and combine,do not sieve out the ginger gratings,as they will release more flavor into the cake when baking,also add the vanilla extract here.

Now,combine the dry ingredients with the wet ingredients until combined,do not over mix.

Remember the cocoa powder? Here is the step for it. Divide the mixture into two equal parts,mix the cocoa powder into one of the parts,

To get the marble cake effect put the mixture into an oiled and linned pan, alternating between the plain one and the cocoa powder one,repeat this until all the batter is over. To get the flower on top,simply run a Tooth pick From the pan towards the center of the pan(like you are drawing the radius..RADIUS NOT DIAMETER please do note that!.... of the cake)

Finally,place the pan into the pre heated pressure cooker/oven/ sufuria

After 30 mins the sweet aroma of the. Ginger and vanilla will tell you the cake is ready, but just to be sure, stick in a toothpick if it comes out clean it's done,if not let it bake for ten more minutes.

And voila !!!! The cake is done.Best served with ice cream or a delicious homemade custard (but that's for another day😜)
