Ingredients

  • cupcakes
  • 4eggs
  • 2 cupsugar
  • 1 cupvegetable oil
  • 2 cupflour
  • 2 cupcanned pumpkin
  • 2 tspbaking soda
  • 2 tspcinnamon
  • 1/2 tspsalt
  • frosting
  • 8 ozcream cheese, softened, dividwd
  • 1 stickbutter, softened
  • 2 lbbag powdered sugar
  • 2 tspcinnamon oil

Steps

    Preheat the oven to 350°F.

  2. 2

    Cupcakes: Beat eggs in a large bowl, add all other ingredients and mix well. Pour into two lined cupcake pans. Bake approximately 35 minutes.

    Frosting: Melt 4 Tbsps butter in small saucepan over medium heat until butter starts to brown. Remove from heat. Mix cream cheese, melted butter and unmelted butter together, add powdered sugar and mix with hand mixer on medium speed, adding sugar until frosting is stiff enough to hold peaks. Add cinnamon oil. Frost or pipe onto cooled cupcakes.
