Ingredients

  • 1 1/2 tspsesame pil
  • 2 tbspreduced sodium soy sauce
  • 1 cupchopped yellow onion
  • 1 1/2 cupsshredded Brussels sprouts (about 10-12)
  • 1 tbsppeanut oil (olive oil works too, if allergies)
  • 2 clovesgarlic, chopoed
  • 2 tspchopped ginger (I'm guilty of using the paste)
  • 8 ozlean ground pork
  • 3/4 tspChinese Five Spice powder
  • 1/4 tspblack pepper
  • 1egg plus 2 egg whites, lightly beaten
  • 3/4 cmillet, toasted and prepared with 2 1/4 c chicken broth
  • (can substitute gluten free brown basmati for similar results)
  • 1 cfrozen peas, thawed
  • 1 tbspblack sesame seeds (I use black & tan gomasio)

Steps

  1. 1

    Whisk together sesame oil and soy sauce - set aside

  2. 2

    In a medium skillet, sauté onion and sprouts in peanut oil for 3-5 minutes until onion starts to become translucent. Add garlic and ginger, cook for 30 seconds more. Transfer to a large bowl.

  3. 3

    Add pork, Chinese powder, and pepper to skillet. Cook until meat is no longer pink, about 5-7 minutes. Transfer to the bowl.

    Add egg to the skillet and scramble, about 2 minutes. Add to bowl.

  5. 5

    Combine millet with the vegetables, pork, and egg, and add the peas. Drizzle with soy mixture and sesame seeds and toss to mix.
