Ingredients

4 servings
  1. 1Oven Stuffer Roaster (5-6 lbs)
  2. 1/4 cupOlive Oil
  3. 2 tbspMinced Garlic
  4. 1 tspSalt
  5. 1 tspBlack Pepper
  6. 1 tbspParsley
  7. 1 tbspOregano

Steps

  1. 1

    Mix all ingredients into a small bowl and let sit for 10 minutes.

  2. 2

    Wash and clean chicken with cold water and lemon juice. Once cleaned and rinsed, place chicken into a large pot or tray and coat with mixture inside and out. If you like you can make some cuts into bird and push in some of seasoning mixture.

    Cover chicken and place in refrigerator and let marinate for 12-24 hours.

  4. 4

    Preheat oven to 400°F and place chicken on tray uncovered and cook for 1 hour 30 minutes. After the first hour you can baste the chicken with the drippings.

  5. 5

    Notes: This recipe is good for either whole Chicken, Cornish Game Hens or Chicken parts.
