  1. 2 tbspCanola Oil
  2. 3Chopped Celery
  3. 1 mediumonion (chopped)
  4. 2Garlic Cloves (minced)
  5. 1 tbspchilli powder
  6. 1 tbspground cumin
  7. 6 cupMexican chicken broth-Use the cubes (tomato flavor)
  8. 1 canGreen Chiles-Mild or Hot
  9. 15 ozHominy
  10. 4canned whole tomatoes roughly chopped
  11. 4frozen corn on cob halves
  12. 1zucchini (chopped)
  13. 1 tspdried oregano
  14. 1juice of 1 lime
  15. 1 dashsalt and pepper
  16. 1whole rotisserie baked chicken from Safeway - chicken pulled apart for ingredients

    Heat the oil in a medium saucepan over medium heat. Add the onion, zucchini, celery, hominy, garlic, chili powder, and cumin, and cook until the onion softens, about 5 minutes. Add the chicken broth, pulled chicken, corn halves, bring to a boil, reduce the heat slightly, and simmer, uncovered, for 10 minutes. Add the green chiles, posole, tomatoes, and oregano and cook for another 5 minutes
