Malaysian curry (Gordon Ramsay style) with carrots and potatoes.
Cooking Instructions

Blend Ginger, garlic, shallots, chilis and turmeric into a paste, and add 2tbl spoons of oil to the paste.

Put 2 large tbl spoons of paste to a frying pan. Peel and chop potatoes and carrots, throw in with the paste and give a good stir. Don't fry'em! Add the coconut milk and lower the heat.

While potatoes and carrots cook, fry the chicken in another frying pan with chopped onion. season the chicken with salt and pepper. The chicken doesn't need to be fully cooked because you add it to the sauce with carrots and potatoes.

Add the stock to the pan with potatoes and carrot. Stir. Then add the chicken. You can also add Soy sauce and fish sauce. Give it a stir and let simmer until the potatoes and carrots are cooked.

Cook the rice.

Serve the curry wirh rice and enjoy!
