  • salad
  • 1 bunchspinach leaves
  • 1 packagescherry tomatoes, cut in half
  • 1avocado, sliced thinly
  • 150 gramscrispy bacon pieces
  • 8baby bocconcini, cut in half
  • 1/4 cuppine nuts, toasted
  • vinaigrette
  • 1/2 cupextera virgin olive oil
  • 1/4 cupwhite vinegar
  • 1/2 tsporegano
  • 1salt and pepper

    place spinach on plate & scatter tomatoes, avocado, bacon & bocconcini over the top

  2. 2

    combine vinaigrette ingredients in a jar, shake until well combined.

  3. 3

    drizzle over salad & toss gently

  4. 4

    scatter with toasted pine nuts & serve with warm bread
