3 tbspfresh lemon juice
2 tbspolive oil
1 clovegarlic clove minced
1/2 tspground cumin
1/2 tspground black pepper
1 canof 19 oz. black beans, rinsed and drained
1 cupfresh or frozen thawed corn kernels
2celery stalks , diced
1green pepper seeded and diced
1red pepper seeded and diced
1/2red onion finely chopped
3/4 cupcubed reduced fat Monterey Jack cheese

in large bowl, combine the lemon juice, oil, garlic, cumin, and black pepper.

add beans, corn, celery, bell peppers and onions.....toss to coat

serve topped with cheese
