Ingredients

6 servings
  1. 1 cupBlueberry preserves
  2. 1/2 cupFrozen blueberries
  3. 2/3 cupVinegar -- I use balsamic, white or raspberry is fine too
  4. 6 tbspDijon mustard
  5. 6Chicken breasts
  6. 1Salt/pepper to taste
  7. 1Evoo for frying

Cooking Instructions

  1. 1

    Sprinkle chicken w salt/pepper. Place in large pan in hot olive oil. Cook 6-8 minutes on each side. Remove from pan and tent loosely with foil to keep warm.

    Mix remaining ingredients and add to hot pan. Bring to boil, lower heat and simmer 15 to 20 minutes or until thick, stirring occasionally.

    Place chicken back in pan, turn to coat. Serve chicken with sauce and jasmine rice on the side.
