Ingredients

4 servings
  • 1 headCauliflower
  • 1 cupYellow Onion, Chopped
  • 3 cloveGarlic, Minced
  • 1 tbspExtra Virgin Olive Oil
  • 3Lime, Juiced
  • 1 cupCilantro, Chopped
  • 1 dashSalt & Pepper, to taste

Steps

  1. 1

    Rinse cauliflower and chop into uniform pieces.

  2. 2

    Use a blender or food processor to rice the cauliflower.

  3. 3

    Heat oil and onions in a saucepan until the onions are slightly brown.

  4. 4

    Add the garlic to the saucepan and stir it in with the onions.

  5. 5

    Add the riced cauliflower to the saucepan and sauté it for about 10 minutes.

  6. 6

    Stir the lime juice, salt, and pepper into the riced cauliflower and sauté it for 3-5 more minutes.

  7. 7

    Remove the saucepan from het and stir in the cilantro.

  8. 8

    Yum!
