heat pan over medium heat and add oil, peppers, onions, garlic and corn. saute until soft yet crunchy.

add rice, seasonings and toss to coat everything.

cook for 5 minutes stirring so rice doesnt stick. by this time corn should be defrosted and rice should be warmed through.

taste and adjust any seasonings if you like. this reciepe is so versatile. you can add or take out what you want. great served with any protein. my kids love it with tacos
