Perfect Red Rice

Classic red rice my family makes to accompany many of our traditional hispanic meals; such as: mole, enchiladas, caldo de pollo/ or albondigas, etc. Great side dish, super easy and quick to make. Surprisingly not many people en know how to make it. So i decided to add to my recipes. To add a little texture and diversity we sometimes add canned corn and/or 1 can tomato and 1 can pato tomato salsa. Yummy!!

Ingredients

4 servings
  1. 1/4 cupvegetable oil
  2. 2garlic cloves
  3. 2 cupwhite rice
  4. 2 cantomato sauce (8oz each)
  5. chicken bullion
  6. 4 canwater (use tomato cans)
  7. 1 canwhole kernnel corn (optional)
  8. 1 canpato sauce (8oz) (optional)

  1. 1

    Place a pan on High medium heat. Add the oil. Let it head up for 1 min. Add the garlic cloves.

  2. 2

    Once garlic begins to brown (after 1-2min), add rice. Stir around until rice begins to tan. (About 3 min).

  3. 3

    Add 2 cans of tomato sauce. Fill cans with water ( for a total of 4 cans of water). Stir.

  4. 4

    Add 2 spoonfulls of chicken bullion powder (about 1/4cup). Stir. Taste and add more bullion (to taste). cover lid. Turn heat down to medium low. Let sit for 20 min. (Once its ready you should be able to poke a fork staight down to bottom and come up clean.

  5. 5

    For some texture : add 1 can canned corn when you add the water. And other veggies like green onions go great here too.

    For some heat: use 1 can regular tomato sauce, 1 can salsa de pato.

25yr old nursing student, love baking and cooking ♡I watch food network every day; chopped, hells kitchen, master chef, iron chef, cupcake war, I love these shows and watch them almost religiously! I learn a lot from them actually lol.I just had a baby girl 3 months ago, and im working on getting my body back lol, Im happily married to a great man, my best friend, 4 years 7 months to the date, and I won his heart over way before he knew I could cook, but it didnt hurt once he found out ;^)
