Ingredients

  1. 16eggs
  2. 1 cupmilk
  3. 1/2 cupsour cream
  4. 1/4 stickbutter
  5. 1 packagesbacon
  6. 2 cupfrozen homefries potatoes
  7. 1/2 cupsliced mushrooms
  8. 1 cupripped up FRESH spinach
  9. 1/4 cupfresh sliced chives
  10. 1 dashpepper
  11. 1 dashsalt
  12. 1 packagesKorr Hollindance Sauce Mix or your choice of this type of sauce.
  13. 1 cupmilk for sauce
  14. 1/4 stickbutter for sauce

Steps

    preheat oven to 350

  2. 2

    fry bacon to a crisp, cool down and crumble

  3. 3

    in a large bowl wisk 8 eggs, 1/2 cup of milk, dash of salt and pepper, and sour cream. Add to buttered cake pan. Repeat with leftover eggs and 1/2 cup of milk add to the same cake pan.

    Sprinkle crumbled bacon and scallions evenly to mixture.

  5. 5

    Add homefries evenly to the mixture.

  6. 6

    Finally add mushrooms and spinach.

  7. 7

    put in oven to 45-50 minutes or until center is firm when poked with a fork.

  8. 8

    Once completely firm, sprinkle cheese on top, put back in the oven for two minutes or until melted.

  9. 9

    Take out of oven and slice portions while still warm.

  10. 10

    While cooling prepare the Hollindance sauce. Warm 1 cup of milk 1/4 cup butter and package stirring constantly until it boils. Keep stirring for one minute untill it thickens. Drizzle ontop of cheese and serve.
