Ingredients

  1. 1 lbShrimp, peeled and deveined
  2. 5 tbspolive oil, extra virgin
  3. 1/2 lbassorted mushrooms (such as crimini, baby portabela, and stemmed shiitake)
  4. 2 lbplum tomatoes. seeded, chopped
  5. 3/4 cupchopped fresh basil
  6. 3/4 cupplus 2 tbls chopped fresh parsely
  7. 6 clovegarlic, minced
  8. 1/2 tspdried crushed red pepper
  9. 1/2 lbfeta cheese, crumbled
  10. 1 cupgrated parmesan cheese
  11. 3/4 lblinguine
  12. 1salt and pepper

    Place shrimp in medium bowl; sprinkle with salt and pepper.

  2. 2

    Heat 1 1/2 tsp oil in heavy skillet over medium - high heat.

  3. 3

    Add shrimp; sauté until cooked through about 3 minutes. Using slotted spoon, transfer to plate; cover.

  4. 4

    Add 4 tbls of oil to same skillet. Add mushrooms; sauté until tender, 8 minutes.

  5. 5

    Add tomatoes, basil, 3/4 cup parsley, and red pepper, if desired.

  6. 6

    Stir until heated through; mix in both cheeses.

  7. 7

    Meanwhile, cook linguine in large pot of salted boiling water until tender but still firm. Drain., reserving 1/2 cup of pasta water. Return pasta to pot.

  8. 8

    Add 1 1/2 tbls oil to pasta; Ross to coat.

  9. 9

    Add mushroom - tomato mixture to pasta, toss to coat. Season with salt and pepper.

  10. 10

    Top with Shrimp and 1 tbls parsely.
