Southwest Tuna Melt
I had an avocado and some tuna to use up, so I came up with this on the fly! It went over very well! I'm recording this for my benefit, but I hope you enjoy it as well! Feel free to leave comments or suggestions!

Drain all liquids from the tuna (any liquids left will make the bread soggy).

Peel the avocado and place the pulp in a medium sized mixing bowl. Mash until the lumps are mostly worked out.

Chop the green peppers, onions, and cilantro. Add to mixing bowl.

Add the tuna to the bowl, as well as the Tabasco sauce, lime juice, and seasonings.

Mix until the ingredients are distributed evenly. Add more of any if the ingredients if it doesn't have the kick you want.

Spread the mixture over the 4 slices of bread, and add the shredded cheese to the top.

Broil in oven/toaster oven for 5-10 minutes. All ovens cook differently, so keep an eye in it so it doesn't burn!

Plate your melts and serve! Great with chips and salsa on the side!

Alternatively: The spread makes for a great chip dip as well! Just forego the bread and cheese!
