Kale Barley Bowl

This was really easy to make. I had roasted cauliflower and tofu in my fridge, so I just threw those in a bowl with the barley and kale. Instead of hummus you could dress if with salad dressing or olive oil, and any leafy green would work in place of the kale.

Preheat an oven to 400°F. Chop the cauliflower into small florets and the tofu into 1/2-inch cubes. Roast both on a sheet for about 40 minutes, until golden.

Cook the barley according to package directions.

Steam the kale in a steamer for about 5 minutes.

Combine all ingredients in a bowl, season to taste.
