Great recipe during mushroom picking season, and works very well for dried mushrooms. I use a variety of mushrooms.
Steps

Rinse mushrooms in 3-cups hot water - set aside.

Melt butter, add onions and garlic.
- 3
Add in 2-cups mushroom water, watch out for possible bottom sludge.

Stir in flour, beef broth and nutmeg.
- 5
Cover and simmer for 30-minutes.
- 6
Add rinsed mushroom to soup and salt & pepper to taste.

Add cream and heat through.
