Ingredients

  • Filling
  • 1 tbspextra virgin olive oil
  • 1 eachmedium onion (finely chopped)
  • 3 eachcarrots (peeled and finely chopped)
  • 500 gramsbeef mine
  • 300 mlbeef stock (made with 1/2 stock cube)
  • 400 gramschopped tomatoes
  • 2 tbsptomato purée
  • 2 tspdried oregano
  • 1 tspworcestershire sauce
  • 50 gramsfrozen peas
  • Mash
  • 750 gramsold potatoes (peeled and chopped)
  • 100 mlextra virgin olive oil
  • 100 mlmilk

    Preheat oven to 190°C/170°C fan/gas 5.

  2. 2

    For the filling, heat the oliver oil in a frying pan and sauté the onion, carrots and mince for 5-6 minutes until golden. Add the stock, tomatoes, tomato purée, oregano and worcestershire sauce. Cook for 20-25 minutes until the liquid has reduced, then stir in the peas.

    Boil the potatoes in lightly salted water for 20 minutes, or until tender, and drain.

  4. 4

    Add the olive oil, milk and seasoning to the cooked potatoes, and mash until smooth.

  5. 5

    Transfer the meat filling to an ovenproof dish. Top with the mashed potato and rough up with a fork. Place in the oven and bake for 45 minutes.

I love to cook. I'm a fan of flavours, textures and presentation, especially well spiced fruity dishes, although you won't find any of those recipes here sadly as I tend to use other peoples' recipes and thus deleted the ones I had saved here due to copyright reasons. The recipes I currently have here are my mothers' (Maureen Dewhurst's) old recipes that are ok and are here for preservation rather than presentation and make good comfort foods, unless labelled otherwise.
