Ingredients

  • 1 lbGround Turkey
  • 1 1/2 cupQuinoa
  • 1 canBlack Beans (15 ounces)
  • 1 canDiced tomatoes & green chilies (10 ounces)
  • 1 cupSalsa
  • 1 cupFrozen Corn
  • 1 tspMinced Garlic
  • 1/2 cupOnion
  • 1 cupWater
  • 1 canEnchilada Sauce (19 ounces)
  • 1 tbspChili Powder
  • 1 tspCumin

Steps

  1. 1

    Cook ground turkey until brown. Drain grease and place turkey in slow cooker.

  2. 2

    Add in the quinoa and black beans (drained and rinsed), frozen corn, diced tomatoes and green chilies, salsa, and minced garlic.

  3. 3

    Add the rest of the remaining ingredients.

  4. 4

    Cook on high for 3-3 1/2 hours.
