Ingredients

  1. 1 lbGround Turkey
  2. 1 1/2 cupQuinoa
  3. 1 canBlack Beans (15 ounces)
  4. 1 canDiced tomatoes & green chilies (10 ounces)
  5. 1 cupSalsa
  6. 1 cupFrozen Corn
  7. 1 tspMinced Garlic
  8. 1/2 cupOnion
  9. 1 cupWater
  10. 1 canEnchilada Sauce (19 ounces)
  11. 1 tbspChili Powder
  12. 1 tspCumin

Steps

  1. 1

    Cook ground turkey until brown. Drain grease and place turkey in slow cooker.

  2. 2

    Add in the quinoa and black beans (drained and rinsed), frozen corn, diced tomatoes and green chilies, salsa, and minced garlic.

  3. 3

    Add the rest of the remaining ingredients.

  4. 4

    Cook on high for 3-3 1/2 hours.
