Ingredients

  • 2 lbMeat of your choice. ( I used one pound of ground chicken 1 pound of carne asada)
  • 1plabano pepper chopped
  • 1leek chopped
  • 1 canDark red kidney beans not rinsed
  • 1 canWhite kidney beans not rinsed( also known as Cannelli beans )
  • 1 canEnchilada sauce. ( depending on your personal heat level you can use mild medium or hot I used medium)
  • 1 canRoasted red tomatoes
  • 2 packagesof white chicken chili seasoning mix by McCormicks
  • 2to 3 cloves of garlic
  • 32 ozof chicken stock
  • 2 tbspFresh chopped cilantro
  • 2 cupSharp cheddar cheese shredded
  • 1Dollop of sour cream on each serving optional

Steps

  1. 1

    Brown meat in skillet until no longer pink, sprinkle with one package of the McCormicks white chili chicken mix. Add leek and plabano pepper

  2. 2

    Add chicken stock and all other remaining ingredients to the crock pot ( except cheese). Add meat mixture and second package of white chili seasoning. mix well. Bring to a boil reduce heat and simmer 4-6 hours.

  3. 3

    At this point add cheese. Put a dollop of sour cream on each serving optional
