crock pot enchilada chili

Ingredients

  1. 2 lbMeat of your choice. ( I used one pound of ground chicken 1 pound of carne asada)
  2. 1plabano pepper chopped
  3. 1leek chopped
  4. 1 canDark red kidney beans not rinsed
  5. 1 canWhite kidney beans not rinsed( also known as Cannelli beans )
  6. 1 canEnchilada sauce. ( depending on your personal heat level you can use mild medium or hot I used medium)
  7. 1 canRoasted red tomatoes
  8. 2 packagesof white chicken chili seasoning mix by McCormicks
  9. 2to 3 cloves of garlic
  10. 32 ozof chicken stock
  11. 2 tbspFresh chopped cilantro
  12. 2 cupSharp cheddar cheese shredded
  13. 1Dollop of sour cream on each serving optional

Cooking Instructions

  1. 1

    Brown meat in skillet until no longer pink, sprinkle with one package of the McCormicks white chili chicken mix. Add leek and plabano pepper

  2. 2

    Add chicken stock and all other remaining ingredients to the crock pot ( except cheese). Add meat mixture and second package of white chili seasoning. mix well. Bring to a boil reduce heat and simmer 4-6 hours.

    At this point add cheese. Put a dollop of sour cream on each serving optional
