Ingredients

  1. 2 lbshrimp
  2. 1/4 cupbutter
  3. 1 smallred onion chopped
  4. 1/2chopped red bell pepper
  5. 1/2chopped yellow bell pepper
  6. 1/2chopped green bell pepper
  7. 4 clovegarlic, minced
  8. 2 cupokra (can be omitted)
  9. 1 tbsplemon juice
  10. 1 tspsalt
  11. 1 canshrimp soup
  12. 1/2 cupdry white wine
  13. 1 tbspsoy sauce
  14. 1/2 tspcayenne pepper
  15. 3 cupcooked long grain rice
  16. 1/4 cupparmesan cheese
  17. 1garnish with lemon slices or flat parsley

Steps

  1. 1

    Peel shrimp and devein as needed

  2. 2

    melt butter into a large skillet over medium-high heat

  3. 3

    add onion and next 3 ingredients and saute 7 minutes or until the shrimp turns pink

  4. 4

    stir in soup and next 4 ingredients until blended

  5. 5

    pour into a lightly greased 11 x 7 baking dish

  6. 6

    sprinkle evenly with parmesan cheese

  7. 7

    bake at 350°F for 15-20 minutes or until the casserole is bubbly and cheese is lightly browned

  8. 8

    NOTE; Unbaked casserole may be made one day in advance. Cover & refrigerate. Let stand at room temperature for 30 minutes before baking> To freeze unbaked casserole prepare as directed, omitting parmesan cheese. Cover tightly & freeze. Let stand for 30 minutes before baking. Bake, covered at 350°F for 50 minutes. Uncover, sprinkle with parmesan cheese, and bake for 10 minutes more or until cheese is lightly browned.
