Drain olives and set aside

Combine sugar and vinegar in saucepan heat on low until all of sugar is dissolved. Add remaining ingredients and let it sit until cooled. At this time taste mixture and adjust the sweetness or tartness by adding more sugar or vinegar.

Pour cooled mixture over olives and let marinate 4-6 hours, over night is best the longer the better. Caution do not pour hot mixture over olives as this will cause the olives to cook and become soft texture.

Serve with assorted cheeses & crackers, spreads, beer and wine.
