Ingredients

  1. 1 tbspflour
  2. 500 gramsbraising steak cubed
  3. 1 tbspoil
  4. 1 largecarrot (cut in sticks)
  5. 1onion (sliced)
  6. 1garlic clove (crushed)
  7. 1/4 pintsbeef stock
  8. 1/4 pintsbrown ale
  9. 1/2 tbsptomato puree
  10. 1 pinchnutmeg
  11. 1bay leaf
  12. 1 tspbrown sugar
  13. 1 tspvinegar
  14. 1 tspfrench mustard
  15. 2 ozbutton mushrooms

  1. 1

    preheat oven to Gas mark 3, 160°C, 325°F

  2. 2

    season flour, coat meat and fry in half oil until brown

  3. 3

    transfer to casserole dish with raw carrots

  4. 4

    add remaining oil to pan and fry onions and garlic for a few minutes

  5. 5

    gradually add the stock and ale, then bring to the boil

  6. 6

    add all ingredients except mushrooms. stir well and pour over beef and carrots

  7. 7

    mix well, cover and put into oven for 1.5 hours

  8. 8

    taste, adjust seasoning and add mushrooms

  9. 9

    cook for a further half hour

  10. 10

    remove bay leaf before serving
