I have always loved lentil soup but always get it in the can. Finally I decided that it was time to make it the way I have always had it. And this recipe is exactly how I like it!

I have always loved lentil soup but always get it in the can. Finally I decided that it was time to make it the way I have always had it. And this recipe is exactly how I like it!
Cooking Instructions

Cook lentils with water on high for 20 minutes stirring to keep from sticking.

Turn down stove to medium low and cook 20 more minutes stirring occasionally.
- 3
While lentils cook, chop up your vegetables and add to lentils as you finish chopping each one.
- 4
Add the rest of the ingredients to lentils and turn the stove up to medium high and cook until vegetables are cooked thru.

Soup will be hot so be careful when serving. Enjoy!

This is the first time I made this soup, and after one taste, I knew I had to share the recipe! Even my six-year-old liked it! 🤩I like my lentil soup thick and hearty, so the consistency I aim for is like a thin hummus. If you like a more watery soup, add more chicken broth or water. As with all soups, there is a lot of room for modification. If you like spice, chili powder, ginger, or cayenne pepper will amp it up nicely. If you want to make it vegan, substitute the chicken broth with vegetable broth. However, this version as written is perfectly delicious.
