This is a family favorite that was passed down to me by my husband's grandmother. We usually eat this as a light meal for dinner.

This is a family favorite that was passed down to me by my husband's grandmother. We usually eat this as a light meal for dinner.

Mix together the ingredients for the salad dressing and set aside.

Remove the skin and bones from the rotisserie chicken. Chop the remaining meat and set aside.

Heat the frying oil in a pan over medium high heat. Place the wontons, in small batches, in the hot oil and fry until crispy and golden. Remove the fried wontons from the oil and place on a plate lined with paper towel. Once you have finished frying the wontons, break them up into smaller pieces and place them in a bag with 1/4 cup of sugar. Shake the wontons in the sugar until coated. Remove from the bag and set aside.

Just before serving, assemble the chopped lettuce, chicken, green onions and fried wontons in a salad bowl. Toss together with the salad dressing (to taste).
