I had stilton to use up after Christmas and needed soup to cure my cold!!!

Heat the oil in a pan and soften the sliced onion

Add the brocolli and enough chicken stock to cover it

Crumble the stilton in and simmer for 30 minutes

Add the cream and blitz with a hand blender/food processor etc
- 5
Eat the soup with extra stilton crumbled on top and a swirl of cream....enjoy 😊
