  1. Stuffing
  2. 6 largegreen bell peppers
  3. 1 1/2 cupbrown rice
  4. 3 tbspsoy sauce
  5. 3 tbspcooking sherry
  6. 1 1/2 cupextra firm tofu
  7. 1 tspvegetarian Worcestershire sauce
  8. 1/4 cupchopped pecans
  9. 1/2 cupsweetened dried cranberries
  10. 1/2 cupgrated Parmesan cheese
  11. 1pepper to taste
  12. Sauce
  13. 2 cuptomato sauce
  14. 2 tbspbrown sugar

  1. 1

    preheat oven to 350°F (175 degrees C)

  2. 2

    in a saucepan bring 3 cups of water to a boil

  3. 3

    stir in rice

  4. 4

    reduce heat, cover and simmer for 40 minutes

  5. 5

    meanwhile, core and seed green peppers, leaving bottoms intact

  6. 6

    place pepper in a microwavable dish with about 1/2 inch of water at the bottom

  7. 7

    microwave on high for 6 minutes

  8. 8

    in a small frying pan bring the soy sauce, wine, and Worcestershire sauce to a simmer

  9. 9

    add tofu and simmer until the liquid is absorbed

  10. 10

    combine rice (after of has cooled), tofu, cranberries, nuts, cheese and pepper; pack firmly into peppers

  11. 11

    return the peppers to the dish you first microwaved them in

  12. 12

    bake in preheated oven for 25-30 minutes, or until lightly browned on top

  13. 13

    meanwhile, in a small saucepan over low heat, combine tomato sauce and brown sugar; heat until it is hot throughout

  14. 14

    spoon the sauce over each serving & enjoy!!
