Ingredients

  1. 1/2good size mahi mahi
  2. 5 clovegarlic
  3. 1/4 cupolive oil, extra virgin
  4. mint
  5. marjoram
  6. salt
  7. ground black pepper
  8. ground chilli flakes
  9. 5sun dried tomatoes OR
  10. 2fresh tomatoes

Steps

  1. 1

    Preheat oven at 160°C

  2. 2

    Chop garlic and sun dried tomatoes. If using fresh tomatoes cut into 1cm cubes.

  3. 3

    Put fish in a dish and put all the ingrediants on fish, and rub the mixture into the skin on both sides. Leave some of the mixture under the fish and cover the fish with the rest.

    Cook fish in oven for around 30 minutes. Serve with rice
