Ingredients

  • 1 1/4 lbBoneless, skinless chicken breast
  • 2 tbspSesame oil
  • 2 tbspCorn oil
  • 1/4 cupDry sherry
  • 1/4 cupSoy sauce
  • 2 tbspLemon juice
  • 1 1/2 tspMinced garlic
  • 1/2 tspPowdered ginger
  • 1/4 tspSalt
  • peanut sauce
  • 4 tspCorn oil
  • 2 tspSesame oil
  • 1/2 cupMinced red onion
  • 2 tbspMinced garlic
  • 1 tbspRed wine vinegar
  • 1 tbspBrown sugar
  • 1/3 cupPeanut butter
  • 1/2 tspGround coriander
  • 3 tbspKetchup
  • 3 tbspSoy sauce
  • 1 tbspLemon juice
  • 1/2 tspBlack pepper

Steps

  1. 1

    Cut chicken into 1/2 inch wide strips. Combine remaining ingredients and marinade chicken in refrigerator for 1-2 hours.

  2. 2

    Preheat oven to 375°F. Thread chicken on skewers and arrange on baking sheet. Bake approximately 10 minutes, until just cooked through. Serve hot with room-temperature sauce and rice.

  3. 3

    Heat oils in saucepan. Sauté opinions and garlic until they are are softened.

  4. 4

    Add sugar and vinegar, cooking until sugar dissolves.

  5. 5

    Remove from heat and stir in remaining ingredients.
