Bake Roast fat side up for 1 hour

Mix brown sugar, cornstarch, and salt

Stir 1 and 1/2 cups of the apple juice with the lemon juice in a pan

Pour dry mixture into apple juice mixture

Stir constantly until mixture thickens and boils

Stir one minute and set aside

After 1st hour brush Roast with 1/2 cup of mixture and place remaining aside

Roast two hours longer

Mix sauerkraut, apples, carrots and spoon around roast

Spoon remaining apple juice mixture on top of Roast

Cover with aluminum foil and bake 30 to 60 min. longer

Wait 10 minutes before sliced
