Ingredients

  1. 2 1/2 tspcanola oil
  2. 1/2carrot, diagonally cut
  3. 2 tbspgrated and peeled ginger root
  4. 4garlic cloves, finely chopped
  5. 1 lbbroccoli (peel the stems) cut into bite sized pieces
  6. 1/4 cuplow sodium chicken broth
  7. 1 lbfirm tofu, diced
  8. 1/2 cupthinly sliced shiitake mushroom caps
  9. 1red bell pepper, seeded and julienned
  10. 1onion, cut into thin wedges
  11. 1 cupsnow peas, trimmed
  12. 1 tbsplow sodium soy sauce
  13. 1 1/2 tsplow sodium soy sauce
  14. 1 1/2 tspAsian sesame seed oil
  15. pinchcrushed red pepper flakes

Steps

  1. 1

    Heat a large nonstick skillet or wok with a lid over high heat; heat the oil. Stir fry the carrots 1 minute; add the gingerroot and garlic; stir fry 30 seconds. Add the broccoli and broth; steam, covered, 2 minutes, then stir.

  2. 2

    Add the tofu and cook, stirring, 1 minute. Add the mushrooms, bell peppers and onion; stir fry 3 minutes. Add snow peas, soy sauce, sesame oil and pepper flakes; stir fry 1 minute.
