  2. 2ea lemon zest (chopped fine)

    Spread the sugar and zest mixture on a parchment lined baking sheet and allow to dry completely, about 3 days. The sugar should not be wet or sticky.

  2. 2

    Place the sugar and zest mixture into a blender cup and blend until the lumps have broken up and the sugar is about the consistency of garlic powder.

  3. 3

    Store until needed and only use what is needed to rim a glass as the remainder will get damp and clump.
