I grew up eating potatoes. They were a big delicacy in our home and there were only two ways to prepare them it was either boiling or frying, convenience was key in food preparation.
Lately, I have gained a lot of patience with food preparation and the desire to make new recipes look all surmountable

The potato balls require a little patience but its all worth it.
They are a great way to cook up left over mashed potatoes and they are definetely great party bites

Ingredients

4 servings
  • 2 cupsleft over mashed potatoes
  • 1/4tspn black pepper
  • 1/4tspn cayenne pepper
  • 1/4tspn
  • To tastesalt
  • Cheddar Cheese sliced
  • 1egg
  • 2 tbspnall purpose flour
  • Bread crumbs
  • Oil to fry

Steps

    If you are using boiled potatoes mash your potatoes well.

    Prepare all the ingredients.

    Season your potatoes with salt and any other spices of your choice, I prefer pepper always. Mix the spices well by remashing again.

    To make the potato balls.Scoop a chunck using a spoon. Flatten it.

    Place cheddar cheese on the middles

    Cover the cheese well with potato to form a ball. Repeat the process for all other chunck of mashed potatoes.

    To coat the potato ball. Dip it in the flour

    Cover with egg wash. This helps hold the bread crumbs. If you dont like eggs you could use corn flour and water mixture instead.

    Finally coat with bread crumbs. I like generous crumbs. Repeat process for all others

    Pre heat your deep frying oil in a sufuria. Deep fry the potato balls till they get well browned.

    Place them in a paper towelled bowl.

    Enjoy the potatoes as snack to a party... Enjoy with ketch up or marinara sauce.

    You can also bake them instead of deep frying.
