Coke Brined Pork Tenderloin

combine the Coke and salt in a large resealable plastic bag, stirring to dissolve the salt. Place pork in the bag and refrigerate for 2 hours. Pre heat the grill to high. Next combine rub ingredients in a bowl. Remove pork from bag and pat dry with a paper towel. ( discard brine.) Rub paste over the pork then let it stand for 15 minutes. Turn one of the grill to low while other side remains on high. Place pork on the low temperature side for approximately 4 to 6 minutes a side. (depending on thickness of the loin.) Internal temp should read 150°-160°.

Take meat from grill and allow it to rest for 5 minutes before cutting. (this allows the juices to remain inside the loin.)
