Ingredients

  • 1Extra firm tofu (or your favorite meat substitute) pressed and mashed into crumbles
  • 4Mushrooms (diced)
  • 1/2Onion (chopped)
  • 1Zucchini (diced)
  • 1Noodles (I prefer gluten free spaghetti)
  • 3Garlic cloves (chopped)
  • 1 canPasta sauce
  • 1 tbspCoconut oil (or oil of choice)
  • 2 tbspItalian seasoning
  • 1 tspSalt
  • 1 tspPepper
  • 1 tbspOregano

Steps

  1. 1

    Cook pasta according to package directions.

  2. 2

    Sauté onion and garlic in oil for a few minutes until both are slightly golden.

  3. 3

    Add mushrooms and zucchini to pan (add additional oil if necessary) and sauté for a few minutes until almost tender.

  4. 4

    Add tofu, pasta sauce, and herbs. Cook on low for about 5 minutes.

  5. 5

    Serve sauce mixture over pasta and enjoy!
