Ingredients

  1. 1Extra firm tofu (or your favorite meat substitute) pressed and mashed into crumbles
  2. 4Mushrooms (diced)
  3. 1/2Onion (chopped)
  4. 1Zucchini (diced)
  5. 1Noodles (I prefer gluten free spaghetti)
  6. 3Garlic cloves (chopped)
  7. 1 canPasta sauce
  8. 1 tbspCoconut oil (or oil of choice)
  9. 2 tbspItalian seasoning
  10. 1 tspSalt
  11. 1 tspPepper
  12. 1 tbspOregano

Cooking Instructions

    Cook pasta according to package directions.

    Sauté onion and garlic in oil for a few minutes until both are slightly golden.

    Add mushrooms and zucchini to pan (add additional oil if necessary) and sauté for a few minutes until almost tender.

    Add tofu, pasta sauce, and herbs. Cook on low for about 5 minutes.

    Serve sauce mixture over pasta and enjoy!
