Heat oil on medium high heat.

Add all ingredients except rice, beans and liquid.

Cook until onions begin to become translucent.

Add rice and beans. Cook for about 5 minutes, constantly stirring.

Add liquid. Continue stirring. Allow to come to a boil.

Turn the heat down to low, cover and simmer for approximately 35 to 40 minutes.

Fluff with fork when done. Enjoy!
